Crockpot Buffalo Chicken


Recently my family's budget has gotten a bit out of control, so in an attempt to bring it back to earth, I have started making a dinner schedule. I know most people probably have one of these, but I am just now joining that bandwagon.

I thought about having a meal schedule for breakfast, lunch, and dinner but realized that we don't all leave for work/school at the same time and the same goes for the lunch hour. So everyone pretty much fends for themselves for those two meals and I come up with the dinner ideas. We have been doing it for about a month and a half, and so far it has saved us time, money, and energy.

One of the dinners I did recently came from Pinterest (where else?) and was super delicious and easy. It was this recipe for Crockpot Buffalo Chicken. It was really simple and was a total hit with my family. Here was the picture from the original post:

While I totally wish that mine turned out looking that amazing, we actually decided to go the semi-unconventional way and put the chicken on top of our nachos! Not exactly swachos (just for my hubby) but still really delicious :) Here's the photos from my process:

In the end, we realized that we didn't have any of those fabulous rolls and since we didn't want to ruin the recipe with regular hot dog buns, we did the next best thing :)
